Whilst Syrian cuisine is generally known for the freshness of its ingredients which determine the taste and flavour of its dishes, there is also much regional variation in colour, texture, ingredients and modes of preparation. These differences are not only a manifestation of the geography, soil, and climate but also reflect the rich cultural mosaic that Syria is today.. The trade that Syria has enjoyed throughout the centuries has had a marked influence on its cuisine. Many ingredients and spices have been introduced into its cuisine through its prolonged contact with neighbouring cultures civilizations. We find the influence of Indian spices such as saffron in many rice dishes. The presence of the Turkish touch is very evident especially in the northern parts of Syria where many dishes are still known by their Turkish names. The Persian kitchen has also contributed to Syrian cuisine, one can not ignore that the origin of the word mezze is Persian. So when you eat Syrian food, you don’t just enjoy an exclusive taste and a fulfilling meal but you witness the effect of many civilizations and generations on a particular region.
